Every family has their traditional holiday cookie recipe, and ours is no different. We call these “jam jams” because we used to make sandwiches out of them with jam.
These cookies are chewy and addictive, we spread buttercream on them to add even more Christmas cheer (and butter), which is a lovely activity on a Sunday afternoon.
Ingredients
- 1/2 cup butter
- 1 cup brown sugar
- 2 eggs
- 6 tbsp corn syrup
- 1 tsp vanilla
- 3-4 cups flour
- 1 tsp baking powder
- Pinch of salt
Icing
- 1 cup softened butter
- 4 cups icing sugar
- 1 tsp vanilla
- 1 tbsp milk or cream
- Pinch of salt
- Food colouring (optional)
Steps
- Cream together butter and sugar until light and fluffy.
- Add eggs and vanilla and mix until incorporated.
- Add corn syrup and mix thoroughly.
- Add flour, baking powder and salt, incorporating 1 cup at a time and mix until flour disappears. The dough will be thick.
- Roll out the dough on a lightly floured surface and cut out cookies as desired.
- Bake cut cookies at 350F for 10 minutes.
- While cookies cool, beat butter and icing sugar together gradually. Add vanilla, milk or cream and salt and beat until incorporated. Add more sugar/milk/vanilla as needed.
- Decorate your cookies!
